Captain of the ship at Madame Ching is Chef Son. With Vietnamese roots, an American upbringing and experience in the kitchen from New York to Tokyo and Copenhagen, Son’s diverse background steers his approach to cooking which crosses culture and culinary lines.
Close to embarking on a very different life path, Son studied Mechanical Engineering at the University of Maryland before discovering his love for cooking while working part time in a French restaurant where he soon worked his way up from dishwasher to chef de partie. Realising the kitchen was where he felt truly at home, he left his university career behind to pursue his new-found passion. His journey took him across the globe and into the kitchens of the world’s most renowned restaurants.
Drawn in by Hong Kong’s dynamic energy and melting pot of cuisines, Son deepened his understanding of Cantonese cooking and traditions, studying under award-winning celebrity Cantonese Chef Susur Lee. Paying homage to the vibrant city, Son’s dishes tell a story of nostalgia for the millennial age, plating up flavours of familiarity and comfort with creative imagination.
